What is surprising, though, is how quickly this meal comes together!  Since the meatballs are large, you only really need to make about two per person!  (I always make lots since I like leftovers for quick meals on other days)

This recipe is actually from an advertisement for Bertoli Riserva pasta sauce.   I was leafing through a magazine and came across it.

Cheese Stuffed Meatballs
A recipe that comes together quick with a surprise cheese filling.

Ingredients
  • 1 lb ground beef
  • 1/3 cup Italian Seasoned Bread Crumbs *substitute plain bread crumbs and italian seasoning
  • 1 jar pasta sauce, divided
  • 1 1/2 tablespoon grated parmesan cheese
  • 1 large egg
  • 1 clove garlic, crushed
  • 1/2 teaspoon salt
  • 3 oz mozzerella cheese, cut into 12 cubes *I used string cheese, cut into five pieces each
  • 8 oz pasta, cooked and drained

  • 8 oz pasta, cooked and drained
Instructions
  1. Combine ground beef, bread crumbs, 1/4 cup pasta sauce, Parmesan cheese, egg, garlic, and salt in medium bowl. Shape into 12 meatballs. Press 1 cheese cube into center of each meatball, enclosing completely.
  2. Brown meatballs in 12-inch nonstick skillet, drain fat if desired. Add remaining sauce and bring to a boil. Reduce heat and simmer 10 minutes or until meatballs are done. Serve with pasta.
