Parmesan Chicken and Caesar Salad are perfect for when you want a straightforward meal without too much fuss.

Now, when it comes to making a salad for dinner, it is often the last thing I prepare before we sit down to eat, and therefore it is just kind of thrown together.

By thrown together, I mean some torn up lettuce on a plate….

My husband does not consider lettuce on a plate a salad, so I have had to up my game and actually put something else in it!

When it comes to a simple Caesar salad, there aren’t many toppings other than grated parmesan cheese and croutons, so I like to make really delicious croutons.

Yes, you can buy croutons, but they are SO HARD – I have actually scratched the roof of my mouth on them!

These homemade croutons are crunchy on the outside and soft on the inside, which makes them a pleasure to eat.

Once the parmesan chicken is in the oven, these croutons make up in a flash, and dinner seems just that much fancier!

  • 2 thick slices Bread (Italian, baguette, even sandwich bread!)
  • 2 Tablespoons Extra Virgin Olive Oil
  • garlic salt

Instructions
  1. Cut bread into crouton-size pieces.
  2. Heat oil up in skillet.
  3. Once hot, toss in bread cubes, stirring to coat in oil.
  4. Cook, stirring occasionally, until toasted to your preference.
  5. Turn off heat. Sprinkle with garlic salt.

  • 1/2 cup fine dry bread crumbs
  • 1/3 cup grated parmesan cheese
  • 2 tablespoons chopped parsley optional
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 4 chicken breasts boneless, skinless
  • 1/4 cup Italian salad dressing
Prep Time 10 minutes
Cook Time 45 minutes
Passive Time 45 minutes

  • 1/2 cup fine dry bread crumbs
  • 1/3 cup grated parmesan cheese
  • 2 tablespoons chopped parsley optional
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 4 chicken breasts boneless, skinless
  • 1/4 cup Italian salad dressing
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine bread crumbs, cheese, parsley, garlic salt, and pepper; set aside.
  3. Dip chicken into salad dressing and dredge in bread crumb mixture.
  4. Coat a 13x9x2" baking dish with cooking spray. Place dredged chicken in dish.
  5. Bake for 45 minutes or until chicken tests done.
